New York City is a place that values tradition, but also expects that tradition to evolve. Gage & Tollner, which first opened in 1879 in downtown Brooklyn, has done just that. Its current owners, Ben Scheider, St. John Frizell, and chef Sohui Kim, have kept the ornate interiors, and restored them to a fine sheen.
